Cooking Tomato Soup with Meatballs:

Step 1: prepare the onion.

Using a knife, peel the onion from the husk and rinse thoroughly under running water. We lay out the component on a cutting board and finely chop into cubes. Pour the chopped onion into a clean plate and leave it aside for a while.

Step 2: prepare the parsley.

We rinse the parsley branches under running water, shake off excess liquid and put it on a cutting board. Using a knife, finely chop the greens and then pour it into a clean saucer.

Step 3: prepare the tomatoes.

We wash the tomatoes under running water and put in a medium bowl. Fill the container with hot water so that it completely covers the component. Leave the vegetables aside for 5 minutes blanch.

After the allotted time, we carefully take out the tomatoes with a tablespoon and spread on a cutting board. When the component cools down, clean it from the skin with clean hands.
Cut the vegetables into four parts, while removing the place to which the tail was attached.

We spread the pieces of tomatoes in a blender bowl and grind at medium speed until smooth.

Step 4: prepare the garlic.

Spread the garlic on a chopping board and lightly press down with the handle of a knife. Then remove the husk and rinse slightly under running water.

Using a garlic squeezer, grind the cloves and place in a free saucer. For a while we leave the component aside, as it will be useful to us only at the very end of the soup.

Step 5: prepare the pic.

Pour rice into a sieve and rinse thoroughly under running water. Attention: do this until the liquid becomes clear. Then pour the cereal into a separate plate.

Step 6: prepare the meat for meatballs.

In a free medium bowl we spread the pork and ground beef, finely chopped parsley, and also break the egg and pour salt and black pepper to taste. Using a tablespoon, mix everything thoroughly until a homogeneous mass is formed.

Form the meatballs the size of a walnut out of the minced meat and put it on a clean cutting board. Attention: so that the mass does not stick to the hands, we wet our clean hands from time to time under running water.

Step 7: prepare the tomato soup with meatballs.

Pour a small amount of vegetable oil into the pan and put on medium heat. When the container with the contents warms up well, pour the chopped onion here. From time to time, stirring the component with a wooden spatula, fry it until a soft golden color. Immediately after that we turn off the burner and proceed to the direct preparation of the soup.

Pour clean cold water into a medium saucepan and put on medium heat. To make the liquid boil faster, cover the container with a lid. Immediately after that, pour salt into boiling water to taste and mix thoroughly with a tablespoon. Important: We add the last component with extreme caution, since later it will be our soup broth.

Carefully put the meatballs in the pan and cook them after boiling again until they pop up. Attention: if foam forms on the surface, be sure to remove it with a slotted spoon.
Now we get the meatballs with the help of improvised inventory and move it into a small pan. We cover the container with a lid and leave it aside for a while.
Filter the broth through a sieve into another clean pan and put it back on medium heat. Add washed rice to the container and cook it until tender.
Then put the fried onions in the pan and pour the ground tomatoes. Mix everything thoroughly with a tablespoon and bring the soup to a boil. Immediately after that, carefully place the meatballs and finely chopped garlic here and turn off the burner. We leave the pan aside and cover with a lid. Let our tomato soup infuse for 5-7 minutes.

Step 8: serve the tomato soup with meatballs.

Pour the finished tomato soup with meatballs into deep plates and serve it to the dinner table with sour cream and slices of bread. How delicious it is! Moderately sharp and satisfying.
