Tenderness Salad with Chicken

Preparation of tenderness salad with chicken:

Step 1: prepare the chicken fillet.


We take fresh chicken fillet, rinse it thoroughly under cold running water, dry it with paper kitchen towels, put it on a cutting board, clean it from film, cartilage, cut it into 2-4 pieces and put them in a deep pan.

Step 2: cook the chicken.


Next, fill the meat with purified water, so that it is 5-7 centimeters above its level, and put on a strong fire. After boiling, reduce its level to medium. Remove the gray-white foam from the surface of the bubbling liquid - curdled protein, add salt, laurel leaf, as well as black pepper and peas to the pan to taste and cook the fillet under a covered lid 20-25 minutes until ready. Then, using a table fork, transfer it to a clean plate and cool the pieces of the bird to room temperature.

Step 3: boil the eggs.


Then we send the chicken eggs to a small stewpan. We pour in cold water there, so that it completely covers the product and is 3-4 centimeters higher than its level. Add to it a couple of tablespoons of salt, 9% vinegar and after boiling, cook hard-boiled eggs 10-11 minutes over medium heat. When they are ready, with the help of a slotted spoon we transfer them into a bowl of ice water and allow to cool completely.

Step 4: prepare the vegetables.


In the meantime, peel the onion, and cut the roots of each mushroom. Then we wash the vegetables, dry them, put them on a cutting board in turn and grind them. Onions are cut into small cubes up to 1 centimeter in size or quarters or half rings up to 4-5 millimeters thick. We cut the mushrooms in layers of 5 millimeters thick and immediately proceed to the next step.

Step 5: fry the onion with mushrooms.


We put the pan on medium heat and pour vegetable oil into it. A few minutes later we lower the onions there and fry it 2-3 minutes to softness, as well as a slight touch of golden crust. Then add mushrooms to it, season everything to taste with salt, carefully mix the products with a wooden kitchen spatula and cook them together for 13-15 minutes to a blush of vegetables. After that, remove the pan from the stove and cool its contents to room temperature.

Step 6: prepare boiled foods and cheese.


After some time, peel the eggshells, rinse them, dry them, separate the yolks from the proteins and distribute them in separate bowls.

We shred the snow-white part on a fine or medium grater, and knead the yellow one with a table fork in crumbs.

The cooled chicken is transferred to a clean cutting board, with a new kitchen knife, cut it into small cubes the size of 1 centimeter and put them in a clean bowl. Cut off the paraffin crust from the cheese and grind it on a grater.

Step 7: form the tenderness salad with chicken.


Now visually divide all products except yolks into 2 equal parts and lay them out in layers in a salad bowl lubricating each with mayonnaise. First 1/2 part chicken fillet. Then mushrooms fried with onions. Following is protein and some cheese. After that, repeat everything and sprinkle the formed salad with mashed yolks. Then we tighten the salad bowl with plastic wrap and put it in the refrigerator for 2-3 hoursso that the dish is saturated.

Step 8: serve the tenderness salad with chicken.


Tenderness salad with chicken is served chilled as a snack or main course for lunch or dinner. They take it out of the refrigerator, divide it with a kitchen spatula into portions and serve it on plates with fresh bread, this dish does not need any other additions. Recipe Tips:

- very often, mayonnaise is replaced with sour cream;

- sometimes a layer of prunes is added to this type of salad, but before that it should be softened in boiling water and finely chopped. They also put carrots in Korean, having previously cut a long straw into 2-3 parts;

- if desired, during frying, mushrooms can be seasoned with any spices that are used to prepare vegetable dishes;

- A good, but not so tender substitute for chicken - boiled beef meat, boiled sausage or ham.
