Cooking salad with egg pancakes:
Step 1: prepare the meat.
It is better to prepare the meat in advance, but if you do not have time, then it is very simple to do. First of all, boil a full kettle with purified water. Then we take the beef tenderloin, wash it, dry it with paper towels, put it on a cutting board and cut the veins from the product with a sharp kitchen knife, as well as small bones that could remain on it after chopping the carcass.
Step 2: cook the beef.
Then we send the meat to a deep saucepan, pour boiling water from the kettle so that it is higher than the level of the piece 2.5-3 centimeters, and put on a strong fire. After boiling, reduce its level to small, using a slotted spoon remove gray foam from the bubbling liquid - curdled protein, season the beef to taste with salt and cover with a lid so that the gap remains. Cooking time depends on the variety, freshness, size of the piece, the age of the animal, time and exposure. This tenderloin was brewed approximately 1 hour 20 minutes. Periodically, the readiness of the meat is worth checking, just pierce it with a knife, if it comes in easily - it's done! Transfer the boiled beef to a small plate and cool to room temperature.
Step 3: prepare the greens.
While the tenderloin is cooling, we rinse all the greens under a stream of cold water. Then we shake off excess liquid from it, put it on a cutting board, allow it to dry and grind it. Lettuce "Romaine" shred straws up to 1 centimeter thick.
Chop green onions like a julienne, sliced 2 centimeters long, and transfer them to a deep bowl.
Step 4: prepare the boiled meat.
After that, we return to the cooled meat. On a clean board, using a new kitchen knife, we first cut the beef across the fibers with layers, and then with straws from 2 to 3 millimeters thick and transfer to a bowl with chopped greens.
Step 5: prepare the mixture for egg pancakes.
Now we put in the small bowl the desired number of eggs, pour in a little purified water and pour salt to taste.
Set the dishes with these products under the mixer blades, beat them at high speed for several minutes until splendid and proceed to the next step.
Step 6: Cooking Egg Pancakes
Dip a silicone brush in a small amount of vegetable oil, grease the bottom of the pan with grease and put it on medium heat, let it heat up.
After a few minutes, pour a little egg mixture into it and so that it lies evenly, we raise the pan at an angle of 30 degrees, and then turn it with a circular motion of the hand. The result is a gorgeous round pancake.
Browning it on both sides 30-40 seconds each and with the help of a kitchen spatula we put it on a cutting board. In the same way, fry the rest until the egg mixture is over, you get about 4-5 pieces.
Step 7: Prepare Egg Pancakes
When all the pancakes are ready, turn them into rolls 2-3 cm wide and put them under the press, one more clean cutting board is ideal.
After 10 minutes remove it, cut the egg miracle across the noodles up to 5-7 millimeters thick and send to the bowl to the rest of the crushed products, that is, to meat and herbs.
Step 8: bring the dish to full readiness.
In order to make the salad delicious, season it with mayonnaise, black pepper and salt. We mix everything with a tablespoon until a homogeneous consistency, lay out the fragrant dish in portions over salad bowls and serve to the table.
Step 9: serve a salad with egg pancakes.
Salad with egg pancakes - quite a hearty, fragrant and very tasty culinary masterpiece. It is served immediately after cooking, at room temperature. To begin with, the fragrant mixture is laid out in portions in small bowls, plates or salad bowls, then decorated with sprigs of your favorite greens and served as a snack on the festive table, the main dish for dinner or the second course for dinner.
