We clean the potatoes, wash them and boil them in cold salted water. Let them boil for about 20 minutes.
Separately wash the onion and finely chop it.
Put a little oil in a pan and when it has heated up, put the onion and heat it together with the sliced pancetta. Stir occasionally with a wooden spatula. When they have hardened, we stop the fire.
When the potatoes have boiled, drain them and let them cool a bit.
We cut the potatoes in half lengthwise and with the help of a spoon we dig the potatoes to get some boats. We are careful not to break the potatoes.
We mix the potatoes inside well with Telemea cheese, hardened pancetta with onion, salt, pepper to taste.
Place the potato boats in a tray lined with baking paper and greased with oil.
We fill each boat with the mixture from the pan and place a slice of scamorza on each one (if you have greedy children in the house who "steal" a slice of cheese :)) ... divide the rest as I did :))) .
Put the tray in the preheated oven at 200 gr for 15-20 minutes.
