Cooking Mackerel with Cheese:

Step 1: prepare the mackerel.

First of all, we defrost mackerel at room temperature. After some time, we send the thawed fish to a cutting board. With a sharp kitchen knife, we cut off her head, tail, and also pectoral and dorsal fins. After that, we gutted the carcass, cut the costal bones from both sides and remove the ridge. Then we wash it under a thin stream of cold running water, dry it with paper kitchen towels and put it in a small bowl. Then sprinkle mackerel on all sides to taste with salt, a mixture of peppers, sprinkle with juice from half a lemon and put aside on 20 minutes.

Step 2: prepare the cheese mixture.

While the fish is pickling, preheat the oven to 200-210 degrees Celsius and grease a small non-stick baking dish with a tablespoon of olive oil. Then, using a clean kitchen knife, cut off the paraffin crust from the hard cheese and grind it on a large or medium grater directly into a deep plate. There we squeeze peeled garlic cloves through a press, squeeze the juice from the remaining lemon, add marjoram, rosemary, a little more pepper mixture and a tablespoon of olive oil. Thoroughly mix these products to a homogeneous consistency and proceed to the next step.

Step 3: fry the mackerel.

We put the pan on medium heat and pour a couple tablespoons of vegetable oil into it. At this time, dip the pickled mackerel with paper kitchen towels from excess moisture and after a few minutes lower it into the heated fat. Fry fish to a light golden crust on both sides for 3-4 minutes on each. It is not necessary to bring it to full readiness, as soon as it is browned, with the help of a kitchen spatula we transfer the mackerel to the bottom of the prepared form and distribute the cheese mixture evenly on top of it.

Step 4: bake mackerel under cheese.

Next, put our dish in a preheated oven on 10-15 minutes and bake it until golden brown. After the required time has passed, all the ingredients will reach full readiness, we put on kitchen gloves, take out the form from the oven and rearrange it on a cutting board, previously laid on the kitchen table. We shift the fish on a plate and serve to the table with your favorite side dish.

Step 5: serve the mackerel under the cheese.

Mackerel under cheese is served hot as a second course. It is mainly served with fresh vegetables, cilantro, parsley, salad leaves, but you can also come up with a more complex side dish, for example, boiled rice, pasta in a creamy sauce or mashed potatoes. Enjoy a delicious and simple meal!
