Pizza with oyster mushrooms


Oyster Mushroom Pizza Ingredients

For the test:

  1. Extra-fine wheat flour 1 cup
  2. Coarse wheat flour 1 cup

Cooking pizza with oyster mushrooms:

Step 1: prepare the flour mixture for the dough.


Pour two types of flour into a sieve and sift in a medium bowl. This must be done so that the dough turns out without lumps and, of course, airy and soft. Add salt, sugar and dry yeast to this.

Using a tablespoon or fork, mix everything thoroughly until a homogeneous mixture is formed.

Step 2: prepare the egg mixture for the dough.


Using a knife, break the eggshell, and pour the yolk with protein into a free bowl. Using a fork, beat the component until smooth. Then pour olive oil into the container. Again, mix everything thoroughly with improvised inventory.

At the end, pour ordinary cold water into a glass and literally heat it in the microwave 10-12 seconds. The liquid should be barely warm. We pour it into the bowl and once again carefully beat with a fork until a homogeneous mass is formed.

Step 3: prepare the pizza dough.


Pour the egg mass into a bowl with flour mixture and mix everything thoroughly with a fork. Then we begin to pour out a little fine flour and continue to knead the dough with clean hands.

We do this until the mixture begins to stick and becomes elastic and dense in consistency.

With our hands we form a ball from the dough, put it in a clean medium bowl and cover it with a large paper towel or a kitchen cloth. Put the container in a warm place for 40-45 minutes.

During this time, the dough will increase in size 2 times. In the meantime, prepare the filling for pizza.

Step 4: prepare the oyster mushrooms.


We wash oyster mushrooms under running water and put it on a cutting board. Using a knife, we remove the legs and damaged places on the hats. Now we transfer the mushrooms into a small bowl and pour boiling water so that the liquid completely covers the component. Leave them for 10-15 minutes in this condition. This must be done so that oyster mushrooms become softer. After the allotted time, carefully drain the water.

Then we pour a couple of tablespoons of olive oil into the pan and put on a large fire. When the container with the contents warms up well, put the mushrooms in it. Constantly stirring with a wooden spatula, fry the component from all sides until a soft golden color appears. Immediately after that we turn off the burner and set the pan aside. When the mushrooms cool slightly, pour them back into the bowl. Attention: Be sure to wash the container in advance under running water and wipe it with kitchen paper towels.

Step 5: prepare the tomatoes.


We wash the tomatoes under running water and put them in a small bowl. Pour boiling water over the component and leave to blanch for 3-4 minutes. Immediately after that, carefully drain the liquid, and transfer the vegetables to a cutting board. Using a knife, remove the peel and the place to which the tail was attached.

Now cut the first tomato into very thin slices and transfer to a clean plate.

We cut the second into two halves and remove the seeds from each using a teaspoon. We spread the parts of the tomato in a small bowl and leave it aside for a while.

Step 6: prepare the tomato pizza sauce.


We put two halves of the tomato in a blender bowl and pour sugar here. Grind the components at medium speed until a homogeneous mass is formed. After that, pour it into the bowl and add salt and black pepper to taste. Mix everything thoroughly with a tablespoon, and in the meantime, heat the pan over medium heat with 1-2 tablespoons of olive oil. Attention: if desired, before that you can rinse the container under running water and wipe it dry with paper towels so that there is no smell of mushrooms. I usually do not do this, but I cook tomato sauce in a pan, which I used to use for frying oyster mushrooms.

When the container with the contents warms up well, carefully pour the tomato mixture into it. From time to time, stirring with a wooden spatula, simmer the dressing until it becomes thick. Immediately after that we turn off the burner and set the pan aside.

Step 7: Prepare Parmesan Cheese


Using a medium grater, grind Parmesan cheese directly on a clean plate and temporarily leave the component aside.

Step 8: prepare the garlic.


Spread the garlic on a chopping board and lightly crush it with the tip of a knife. Then remove the husk, and move the cloves into a clean saucer.

Step 9: prepare the basil.


We wash the basil branches under running water and put it on a cutting board. With a knife, cut the leaves, and throw out the rest.

2/3 greens transfer to a free plate, and cut the remaining basil into several parts (we will leave it for decorating pizza).

Step 10: prepare the cheese green mixture.


In a clean blender bowl, spread the grated Parmesan cheese, garlic cloves and 2/3 parts basil leaves. At an average speed, we grind all the components until a homogeneous mass is formed. We should get an almost dry mixture of a pleasant green color.

Step 11: Prepare Mozzarella Cheese


Using a coarse grater, grind Mozzarella cheese directly on the cutting board. After the cheese chips, pour into a free plate.

Attention: such a component can even be cut with a knife into very thin plates, as Italians usually do.

Step 12: make pizza with oyster mushrooms.


When the dough is doubled, put it on the kitchen table, crushed with a small amount of premium flour. We knead the ball several times with clean hands and use a rolling pin to roll it into a thin cake, thick no more than 1 centimeter. Attention: each time we turn the dough on the other side, adding flour if necessary. We try to make the cake neat and, of course, round.

Grease a flat baking dish with a little olive oil. We spread the dough layer in the container, leveling the edges with your hands and forming the sides. On the whole surface we prick the tortilla with a fork. This must be done so that in the process of baking pizza does not start to rise in places where we will have a filling.

Now grease the dough with tomato sauce, not forgetting the sides, and sprinkle with ground oregano.

Then spread the whole mozzarella cheese, fried mushrooms and tomato slices over the entire surface. Then sprinkle the pizza with a green cheese mixture and add the capers. Preheat oven to temperature 180 ° C and immediately after that we put on a medium level a baking dish. Cook the dish for 20-30 minutes until golden brown. After the allotted time, we turn off the oven, and we take out the container with the help of kitchen gloves and set it aside.

When the pizza with oyster mushrooms has cooled slightly, sprinkle it with the remaining basil leaves and serve it at the dinner table.

Step 13: serve pizza with oyster mushrooms.


Before serving, cut the pizza with a knife into 6-8 parts and treat friends with pastries along with tea, coffee or beer.

- if desired, smoked or boiled meat, as well as sausage, can be added to the filling;

- in order to prepare a delicious pizza dough, be sure to use flour only from verified brands and fresh by date of sorting;

- in no case use ketchup instead of tomato sauce, as this will radically change the taste and spoil the dish itself.
