Ingredients for Making Cherry Parfait

Step 1: Cook the cherry parfait.
Cooking parfait is a simple matter, but it requires attention and accuracy. First of all, it is necessary to carefully separate the yolks from the proteins. If even a tiny particle of yolk falls in them, then it will not work to beat the lush, stable mass. There is another important point: the dishes in which you plan to whip the proteins should be absolutely clean, dry and without the slightest trace of fat.
So, we separate the yolks from the proteins. We will beat them in a water bath. Therefore, we place the dishes in which they are located over a pot of hot water mounted on a stove over low heat. Heating should not be very strong, otherwise the proteins will simply weld.
Add 150 grams of sugar, mix and beat for the first 4 minutes at low speed, then another 4 minutes at high. Remove the protein container from the water bath and continue whisking until it cools completely. As a result, you should get a very dense and stable mass. While you will be engaged in other ingredients, it is better to put it in the refrigerator.
Pour the remaining sugar into the yolks and beat them into a thick lush mass.
Parfait cherries should be frozen. You can buy it in a store or make it yourself. Place fresh berries in the freezer for several hours, do not forget to remove the seeds beforehand. It is necessary to freeze cherries in advance.
So, we chop the berries with a blender to the desired consistency.
Add the Mascarpone cheese to the chilled cream, mix and beat in a lush, thick mass. Gently mix the whites, yolks and cherries.
Line a bowl or other suitable container with foil and fill the parfait. Put in the freezer for at least 4 hours.
Step 2: Serve the cherry parfait.
Tilt the form from the parfait on a plate and remove the film. Garnish it with whole cherries and serve immediately.
