Ingredients for Making Homemade Mayonnaise on Yolks

Making homemade mayonnaise on yolks:
Step 1: prepare the ingredients.
To prepare this delicious mayonnaise, you will need very few products. So, we put on the kitchen table a measuring cup with refined sunflower oil, a bowl with freshly squeezed lemon juice, we put a couple of eggs, fine salt, black pepper and mustard powder.
Step 2: prepare homemade mayonnaise on yolks.
Now, in turn, we beat each chicken egg with a kitchen knife, separate the yolks from the proteins and arrange them in separate bowls. The latter can immediately be used to prepare any other tasty dishes, and in the bowl with the yolks we add salt, sugar and dry mustard. Then whisk these products with a table fork or a whisk until a homogeneous, slightly lush mass for one minute.
After the mixture in the bowl changes color from a bright yellow to a more delicate - sunny, put it under the mixer blades, turn on the kitchen appliance at low speed and continue to beat the yolks for another 20 - 30 seconds.
Next, pour a tablespoon of refined sunflower oil to them. Mix the products at medium speed for another 30 to 40 seconds.
At this stage, a small amount of fat and yolks form the first emulsion, so the oil should be added gradually: 3 sets of 1 tablespoon.
As soon as the mixture resembles a dough of medium density (like pancakes), increase the mixer speed to the highest level, pour the remaining oil and freshly squeezed lemon juice into a bowl with a thin stream.
Beat mayonnaise until desired density.
Then we transfer it to the gravy boat and serve it to the table.

Homemade mayonnaise on yolks is served immediately after cooking. This magnificent cold sauce is often served with meat, fish, poultry and game dishes. They are also seasoned with various salads, greased pizza basics before baking, savored with sandwiches, decorated canapes and snack baskets. Its taste is very different from the store version with naturalness, freshness and saturation, but such a product is stored in the refrigerator for no more than three days, and it is better to cook it in one portion, which can be used immediately.
