Cooking ribs in a cauldron with vegetables:

Step 1: prepare the ribs.

We take pork ribs and thoroughly rinse under cold running water from any kind of pollution. Next, put them on a cutting board, cut into portions, transfer to a deep bowl, sprinkle to taste with salt and a mixture of spices for meat. After that, thoroughly mix the ribs with spices and leave in this form for 5 minutes.

Step 2: fry and stew the ribs.

Then we put a cauldron on a strong fire and pour a couple tablespoons of vegetable oil into it.
After 3 - 4 minutes put the ribs in the hot oil and fry them until golden brown, occasionally stirring with a kitchen spatula.
After the ribs are browned, pour 100 milliliters of purified water into the cauldron, cover it with a lid and stew the pork 12 - 15 minutes, and at this time we are preparing vegetables.

Step 3: prepare the vegetables.

Peel onions, carrots and potatoes. We remove the stalk from the peppers and gut them from the seeds. Then we wash these vegetables with tomatoes under cold running water, dry them with paper kitchen towels, take turns on a chopping board and chop. The slicing form of these products is not essential, but it is desirable that the size of the slices does not exceed 1.5 - 2 centimeters. Onions can be chopped in half rings, rings or cubes. Carrot - rings or straws.

Potatoes - slices, cubes or cubes. Bell pepper - straws or ringlets. Tomatoes - slices, half-slices or large cubes, it all depends on your desire. We lay out the prepared vegetables in separate plates, and send the potatoes to a deep bowl and fill with water, now it will not darken until use.

Step 4: prepare the ribs in a cauldron with vegetables.

In 12 - 15 minutes the water in the cauldron is almost completely evaporated, and the ribs begin to fry in their own fat. Now, in order not to overdry pork meat, add chopped onion to it and fry these ingredients no more 45 minutes to the transparency of the vegetable.

Then we put Bulgarian pepper, carrots in a cauldron, and cook them together 3 to 4 minutes, stirring from time to time, and after that put tomatoes and potatoes in the same place. We fill all the components of the dish with purified water so that it does not reach the top level of the products for a couple of centimeters.

Then season them with dried basil, bay leaves, black pepper peas and, if necessary, add a little more salt with meat spice. Cover the cauldron with a lid, reduce the temperature of the plate to an average level and simmer the ribs with vegetables 40 - 50 minutes.
After that, remove the cauldron from the fire, put it on a cutting board previously laid on the countertop, and insist the dish under the lid 10 - 12 minutes. Then, using a slotted spoon, we spread the fragrant dishes on plates and serve the ribs with vegetables to the table.

Recipe Tips:

- if the ribs are very fat, cut off excess fat from them is not worth it, just fry them in a cauldron without oil. And if the ribs are dry, it is worth replacing the vegetable oil with pork melted lard, so that the dish is not only tasty, but also hearty;
