Cooking fried cheesecakes:

Step 1: prepare the dough.

Place the crumbly cottage cheese in a deep plate and add salt, cinnamon, vanilla sugar, lemon zest and baking powder to it. Mix everything thoroughly with a spoon.

Add a couple of eggs now and knead everything thoroughly, stir to make the mass homogeneous.

Now you need to gradually add flour and knead the dough so that it does not become too tight, but ceases to be sticky. Depending on the size of the eggs and the humidity of the curd, the amount of flour may be different, so see for yourself.

You will end up with a soft but not sticky dough that can easily be rolled into a ball.

Step 2: sculpt the cheesecakes.

When working with dough, sprinkle a small amount of flour on the countertop. Divide the dough into 5 large parts (for bagels) and 5 smaller parts (for balls).

Roll small pieces between your palms into balls. And those that are larger, first roll up into large balls, then flatten and make a hole in the middle to make it look like a thick bagel.

Step 3: fry the cheesecakes.

A pan with very thick walls and a bottom is ideal for frying syrniki. Pour in the oil so that its layer is high 5-6 centimeters.
When the oil has warmed up enough, dip the cheesecakes into it and fry them until golden brown on all sides.

After frying, let the cheesecakes lie on paper towels to remove excess oil.
