Ingredients for Making Carrot Cake with Glaze

For shortcakes:

Cooking carrot cake with icing:

Step 1: Prepare the carrots.


We wash the carrots under running water, peel them and peel them on a grater with small holes in any convenient plate or on a cutting board.

Step 2: Cook the dough.


For the test, sift the flour, mix it with soda, salt and baking powder and mix thoroughly with a tablespoon.
Then we wash the eggs under running water, break them into the mixer bowl and beat until uniform for about a minute. After which we add sugar gradually and beat for another 4 minutes. Next, without stopping mixing, pour in the vegetable oil.
Now carefully pour the flour mixture into the liquid and beat the homogeneous dough. Then add the carrots and mix again.

Step 3: Bake the carrot cakes.


You can bake the dough with one large cake, and then cut into the desired number of layers in the cake or bake several separately, provided that you have the same shape. In our case, there were two forms that were pre-coated with baking paper.
In any case, preheat the oven to 175 degrees and send to bake our dough until fully cooked. As for time, it will vary depending on the thickness of the layer approximately 25 - 45 minutes.
Readiness can be checked with a match, a toothpick or a regular fork. No traces of raw dough should remain on the inventory.

Step 4: Cook the icing.


In the meantime, bake our cakes, prepare the icing. For her we need a clean mixer. So, put butter and cheese in a mixer bowl and beat until smooth without lumps. Then gradually introduce the sifted icing sugar and vanilla extract. It should not be a very thick white icing.

Step 5: Form the Cake.


We take out the finished cakes from the oven and leave them in the form for about 5 to 10 minutes so that they cool slightly. Then we shift to the grate, remove the baking paper and leave to cool to room temperature.
After the baking has cooled, put the first cake on a beautiful plate, grease it with icing, then carefully lay the second cake and coat the entire cake with the remaining icing.

Step 6: Serve the carrot cake with icing.


Carrot cake with icing is served at room temperature. You can decorate it to your own taste, for example, nuts, grated chocolate, coconut, shredded waffles, fresh berries or fruits, but certainly with a cup of tea or milk.

Recipe Tips:

- If you do not have baking paper, the forms can be covered with foil, which should be treated with vegetable or butter, even though the dough already includes butter.

- If the glaze is too thick, you can dilute it with 2 - 3 teaspoons of milk.

- In such a dough, ground cinnamon is often added to about a tablespoon, as well as vanilla extract.
