Cooking whole grilled chicken:

Step 1: chop the chicken.


First, pay attention to what kind of chicken you are going to use for grilling. It must be thick, with short legs covered with a good layer of meat. In no case is it "running", you can easily distinguish it, such a chicken is thinner and longer-legged. It will come out too stiff and better suited for making soup.

Turn the bird upside down and cut it along the back with a sharp meat knife, cutting the bones.

Turn the chicken over and, pushing it on top with your hands, unfold it like a little book. Optionally, you can also slightly beat the bird with a meat hammer or make incisions where the meat is fatter, that is, on the hips and legs.

Step 2: add the spices.


Now use spices and marinade. Use whatever you like, you can have a lot of paprika and turmeric for color, or you can do with herbs or garlic, ready-made spices for chicken or barbecue are also suitable. Everything to your taste. And leave your bird to marinate for several hours or even for the whole night, putting the chicken in the refrigerator.

Step 3: grill whole chicken.


Lubricate the grill with a small amount of vegetable oil (you can also put foil on top), and then lay the chicken on it with the cut side to the fire. Now your most important task is to prevent the bird from burning. To do this, carefully monitor it and turn it over every 15-18 minutes. Readiness is determined by eye, cutting the bird with a knife in the thickest place, if the meat is white and well away from the bones, everything is ready.
Remove the chicken from the grill and let it stand 7-10 minutesand then serve.

Step 4: Serve the whole grilled chicken.


Cut the finished chicken into portioned portions and serve with any side dish of vegetables, both fresh and baked. Whatever spices and marinade you use, the bird will come out "lick your fingers"!
