Preparation of black chokeberry cordial:
Step 1: prepare the berries.
Sort the berries of Chokeberry, sweeping aside spoiled. In the course of the selection, remove all branches, tearing so that after a small hole remains in their place. At the very end of the rowan berries, pour in a colander and rinse thoroughly, removing vegetable debris, grains of sand and other dirt. After washing the mountain ash, you need to wait until excess water drains from it.
Step 2: prepare the liquor.
Pour the berries of chokeberry in a clean, preferably even sterilized jar. There is no need to tamp and crush, let the berries lie down as they lay down. Add sugar, which is actually not an obligatory part, but without it the drink is not so sweet and the female half is most often dissatisfied with the taste. Last of all, pour vodka in a jar of mountain ash so that it completely covers them. Gently mix all the ingredients with a wooden spoon. Cork the can and set it away from the sun 2-2.5 months. During this time, the berries will give the drink their juice and taste. However, do not leave everything to chance, check the filling every 3-5 days and shake the jar lightly.
Step 3: pour the bottle into the bottle.
Remove the prepared chokeberry from the dark place where she spent the last 60 days and pour it into prepared bottles. And not just pour it, but strain through several layers of gauze to weed out the berries and get a clear, saturated color liquid. Cork the bottles and return them to a dark place where they continue to be stored until the right occasion.
Step 4: serve the chokeberry juice.
Before serving, I recommend a little cooling of the chokeberry juice, and only then pour it into a decanter and set it on the table. And, if the vodka was of good quality, and the rowan berries were juicy and ripe, then on your table there will be a maroon drink with a pleasant bright aroma and taste. Such a liquor is drunk easily and without unexpected consequences the next morning.
