Ingredients for Making Red Bean Lobio

Making red bean lobio:

Step 1: prepare the beans.


First of all, we sort out the beans and remove small pebbles, husks or litter of any other kind from it. Then pour the grains into a colander, rinse thoroughly, transfer to a deep bowl and fill with purified water 12-15 centimeters higher. Insist legumes for 12 hours from evening to nightto swell and out of them gases causing bloating.

Step 2: cook the beans.


After half a day, we re-throw the beans into a colander, rinse again, drop them into a deep pan and pour purified water so that it is 2-3 fingers higher. We put this ingredient on medium heat and after boiling cook until almost ready about 30 minutesperiodically removing foam with a slotted spoon. During boiling, if necessary, you can add hot boiled water, but if it evaporates quickly.

Step 3: prepare the rest of the ingredients.


We don’t lose a minute, at the same time we are doing the rest of the dish. Using a sharp kitchen knife, peel the vegetables indicated in the recipe, thoroughly rinse them with greens, dry them with paper kitchen towels, take turns on a chopping board and chop. We chop the onion in small cubes of 1 centimeter in size, and finely chop the cilantro. Grind the garlic in the same way as leaves and sprigs of herbs, or squeeze it through a special press into a small bowl. After that, put the rest of the necessary ingredients on the countertop and proceed to the next step.

Step 4: fry the onions.


We put the pan on medium heat and pour one hundred milliliters of vegetable oil into it, which is about 5-6 tablespoons. After a few minutes, dip the chopped onions into the preheated fat and fry it until soft and golden. This process will take about 5-7 minutesas soon as the vegetable is browned, remove it from the stove and set aside before use.

Step 5: Cook Red Bean Lobio


Next, we check the beans, if after 30 minutes it has already acquired the desired consistency, that is, it has reached almost complete readiness, add to it suneli hops, zira, coriander, salt and two types of ground pepper: black and hot spicy. Gently loosen everything with a wooden or silicone kitchen spatula, again, if necessary, add a little water, so that it half-covers the beans, and simmer them for 15 minutes to full softness.

After a quarter of an hour, season with lobio garlic, fried onions and almost the whole cilantro, leaving a few pinches for decoration. Mix everything again, taste it and, if necessary, add more spices. After boiling again, reduce the heat under the pan to a minimum, cover it with a lid and simmer the fragrant dish for another 15-20 minutes, during this time, some bean grains will completely boil, and the remaining liquid will acquire a thick, slightly viscous structure. Then we turn off the stove, give the dish a little insist and start tasting!

Step 6: serve red bean lobio.


Red bean lobio is served hot as a full-fledged second vegetarian dish, appetizer or side dish for meat, poultry, fish or game dishes. After preparation, the aromatic bean mixture is distributed in portions on plates with the ladle, crushed with each remaining cilantro or other favorite greens and put on the table along with Georgian bread Tonis Puri or Shotis Puri, as well as other equally tasty food. Recipe Tips:

- if you cook this dish in the summer or in the warm spring, then it is better to insist the beans in the refrigerator, after tightening the bowl with plastic wrap. Make lobio in the winter, then legumes can withstand the right time at room temperature, periodically changing the water;
