Ingredients for making classic hodgepodge

Important: do not forget to take bay leaves from the finished broth.

Step 2: prepare meat delicacies.


Various smoked meats can be used as delicacies, including not only meat, but also chicken or duck meat, for example, it turns out even tastier with them. The main thing is that all selected ingredients impress with their variety and taste. No matter what you choose, cut delicacies into thin strips. Do not forget to clear the smoked sausages from the shell.

Step 3: prepare the cucumbers.


Cut pickles as well as delicacies, cut into thin strips.

Step 4: prepare the onion.


Peel the onions and chop them into small cubes. It is most convenient to peel the onion if it is first cut into halves and cut off the ends on both sides.

Step 5: Cook the roast.


In vegetable oil, fry the onions until a light golden hue, that is, for about 3-4 minutes. Then add the cucumbers and fry another 3 minutes. At the very end, put tomato paste in a skillet with other ingredients, mix well and simmer over medium heat for 5 minutes.
Fry the sliced ​​meat delicacies in a separate pan until a delicious golden crust appears.

Step 6: cook the hodgepodge according to the classic recipe.


When all the other ingredients are prepared and the broth is cooked, it’s time to move on to the main stage of cooking - assembling the hodgepodge. First put the fried delicacies and chopped pork in a broth pan. Bring to a boil and cook 7 minutes over medium heat. Next in line are fried onion and cucumbers in tomato paste, pour them into a pan and mix. Pour in the cucumber pickle, mix well again. Salt, sprinkle a mixture of ground peppers. Turn off the heat, cover the hodgepodge with a lid and let it brew for 30 minutes. It is at this stage that you can add fresh or dried greens to your taste.
While the soup is infused and comes to readiness, rinse the lemon and cut it into thin circles. You do not need to cut olives and olives, they are added whole to the soup.

Step 7: serve the classic hodgepodge.


Pour the finished hodgepodge into portioned plates, add to each slice of lemon, some olives and olives, as well as about a tablespoon of sour cream. It will not be amiss to offer homemade rolls or pieces of fragrant black bread to this wonderful soup. That's all ready, eat yourself and treat everyone gathered at the table.
