Making lean cabbage pie:

Step 1: prepare the dough.

Pour warm clean water into a deep bowl and add dry yeast here. Using a tablespoon, mix everything thoroughly until smooth. We should get a pale brown liquid. Leave her aside for 5 minutes. After the allotted time, pour into the container 1 tablespoon of sugar and again we mix everything thoroughly until smooth.

After this, pour the flour into a sieve and sift directly over a large bowl. In the center of the embankment with clean hands, make a small depression and pour the yeast liquid into it. In parallel, we begin to mix everything thoroughly with improvised equipment so that no lumps form. We should get a liquid mass. Cover the bowl with dough with a cloth towel and place in a warm place for a couple of hours. During this time, the mass should increase in size approximately 2 times and start bubbling. In the meantime, we can prepare the filling for the pie.

Step 2: prepare the carrots.

Using a vegetable cutter, peel the carrots from the peel and then rinse thoroughly under running warm water to remove any residual soil and other dirt. Then we spread the vegetables on a cutting board and rub with a coarse grater until the state of shavings. Pour the crushed components into a free plate.

Step 3: prepare the onions.

Using a knife, peel the onion from the husk and then rinse thoroughly under running warm water. Next, shake off the component from excess fluid and put it on a cutting board. With the same inventory, finely chop the onion into cubes and then pour into a clean plate.

Step 4: prepare white cabbage.

White cabbage is well washed under running warm water, shake off excess liquid and spread on a cutting board. Using a knife, chop the vegetable into thin strips and then pour into a clean large bowl.

Step 5: prepare the filling for the cake.

Pour vegetable oil into a pan and put on medium heat. When the contents of the container are well warmed up, pour the chopped onion here. From time to time, stirring it with a wooden spatula, fry for 5 minutes until soft and pale golden.
After the allotted time, we spread the carrot chips in the pan. Having mixed everything well with improvised inventory, we continue to fry vegetables 10 minutes more.

Next, add slaw cabbage here, salt to taste and prepare additional stuffing 10 minutes. Attention: do not forget to sometimes stir the components with a wooden spatula so that they do not burn at the base. After the allotted time, cover the pan with a lid and simmer vegetables another 15 minutes. At the end, turn off the burner and proceed to the preparation of the dough.

Step 6: prepare the dough.

By this time, our couple must already come. Therefore, add salt and another tablespoon of sugar to the bowl. Using a tablespoon or hand whisk, thoroughly beat until a homogeneous mass is formed. Then pour vegetable oil here and mix everything again. Important: Do not be alarmed if during this process the dough begins to decrease in size. It should be so. This is a consequence of the activity of yeast, which emit carbon dioxide and thereby increase the liquid mass.
Now, using a sieve, we begin to sift the flour in small portions and simultaneously continue to whisk everything with a whisk or a spoon. So we will not have lumps. Knead the dough until it becomes elastic, soft and stops sticking to the fingers. By the way, if it’s not convenient for you to work with the mass in a bowl, then it can be laid out on the kitchen table, crushed with a small amount of flour.

At the end, we give the test the shape of a ball, put it back in a bowl, cover it with a cloth towel and put it in a warm place for 40-60 minutes. During this time, the mass should again increase in size.

Step 7: prepare a lean cabbage pie.

When the dough increases in size, knead it again with clean hands and separate 2/3 of the total mass. We form a ball from this piece and put it on the kitchen table, crushed with a small amount of flour. Using a rolling pin, we roll out a cake with a thickness of about 0.5-0.7 centimeters.
Immediately after this, we grease the bottom and walls of a deep baking dish with a small amount of vegetable oil. Gently spread the cake here so that its edges go onto the sides of the container. Next, put the form in a warm place and let the formation approach for half an hour.
In parallel with this, spread the remaining piece of dough onto the kitchen table, crushed with flour. Using a rolling pin, we roll out an oblong cake from it and then cut it with long thin strips with a knife.

After 30 minutes, spread the cabbage filling into the mold and be sure to level it with a tablespoon so that it evenly fills the container.
Then, on top of the stewed vegetables, spread the strips of dough crosswise. At the end, we bend the edges of the tortillas inward so that they go onto the "grate". Thanks to this, our cake will keep its shape after cooking. Now leave the pastries in a warm place yet for 30-40 minutesso that it slightly increases in size.

In the meantime, turn on the oven and heat it to a temperature 180 degrees. Then put the form on a medium level and bake the cake for 20 minutes until a bright golden crust appears on the surface. At the end, turn off the oven, and take out the container with the help of kitchen gloves and set it aside, covering it with a cloth towel.

Let yourself reach a warm state.

Step 8: serve the lean cabbage pie.

When the cake has cooled, move it to a special flat plate and use a knife to cut portioned slices. We serve to the dining table with tea, coffee, compote, juice or kefir. As you like more.
