Step 1: Prepare Beijing cabbage.


Peking cabbage appeared in our stores relatively recently, so, unfortunately, not everyone can prepare and chop it correctly yet. The first thing you should do with it is the same as with white cabbage, that is, remove the top leaves, because they are often dry and sluggish. Then take the head of cabbage by the stump and, holding it with the tips of the leaves down, rinse under cool running water. Then wipe the cabbage with disposable paper towels to dry.
After washing, put the cabbage on a cutting board and cut off its lower part, literally 3-4 centimeters, no more. It is not necessary to cut off the entire white part, since it contains the most useful substances, vitamins and it is the most juicy.
Divide the cabbage into two equal parts. Lay one of the halves on the board, flat side down and cut along the thick stripes, and then across, but already making the stripes thinner. After repeat all the same with the second half of a cabbage head.

Step 2: Cooking Beijing Cabbage Salad with Butter.


Put chopped Beijing cabbage in a salad bowl. Add salt and pepper to it, like black or red. Mix the salad with a tablespoon and fork. You can also squeeze cabbage leaves slightly to get a little juice.

You need to fill the salad with vegetable oil at the end, as it prevents the dissolution of salt and other spices, and, accordingly, the juice due to it will be worse.
