Cooking vegetable stew with pumpkin:

Step 1: prepare the ingredients.


So, you decided to cook this delicious vegetarian dish and just have all the right products at hand, then let's get started. First, put on a medium fire a full kettle with purified water, let it boil. We don’t lose a minute, we take a small pumpkin weighing one kilogram, wash it, dry it with paper kitchen towels, put it on a cutting board and cut it into 2 equal parts with a sharp kitchen knife.

With a tablespoon, remove the seeds with fibers from this vegetable and remove the hard peel. Then cut the flesh into medium cubes, slices or sticks from 1.5 to 2 centimeters in size and transfer them to a clean bowl.

Then we wash the tomatoes, make a cross-shaped incision on each, put them in a deep bowl, pour boiling water from the kettle so that it completely covers, and leave it in for 40-60 seconds. After that, we dip the tomatoes in a bowl of ice water, cool, dry, carefully peel the tomatoes from the tomatoes, divide them into 4-6 equal parts one by one, fold them into the blender bowl and grind them to a state of liquid puree at high speed.

Now we rid the sweet salad pepper from the stalks, gutting them from the seeds, rinse, dip with paper towels and chop with straws or pieces of any shape up to 1 centimeter thick.

Then peel the onions, carrots and garlic. We also wash them under trickles of cold running water, dry them, take turns to move them onto the board and grind them. The first with cubes, quarters or straws, and the second with rings, half rings or simply shred on a coarse grater.

We squeeze out the cloves through a special press into a small bowl. After that, put the rest of the ingredients on the countertop and proceed to the next step.

Step 2: prepare the vegetable stew with pumpkin.


We put a deep frying pan, a cauldron or a non-stick pan on a medium fire and pour in the right amount of vegetable oil. After a few minutes, dip the onion with carrots in a well-heated fat and fry them until tender golden color for about 4-5 minutesstirring constantly with a wooden kitchen spatula. As soon as these vegetables are a little browned, add pumpkin with sweet bell pepper to them. Loosen everything until smooth and simmer 5 minutes.

Then we season the half-prepared dish with ground tomatoes, squeezed through a press of garlic, paprika, laurel leaf, salt and two types of pepper: chili flakes, as well as ground black pepper. Again we mix everything, cover with a lid so that a very small gap remains, and simmer on a very quiet fire 30 minutesfor which the stew is fully prepared. As soon as it reaches the desired consistency, all the components of the food soften, becoming tender, turn off the stove and let the aromatic dish brew 10-12 minutes. Then we lay it out in portions on plates and start tasting.

Step 3: serve the vegetable stew with pumpkin.


Vegetable stew with pumpkin is served hot as the second main vegetarian dish, although when cold it can be served as a good appetizer, salad or side dish for meat, poultry, fish or game. Before tasting, each portion of this aromatic dish can be sprinkled with fresh finely chopped greens of dill, parsley, cilantro, basil, green onion, seasoned with cream, sour cream or mayonnaise. This stew is not very satisfying, so it’s better to relish it with fresh or rich rolls, pita bread, tortillas, but bread is also suitable. Cook with love and enjoy healthy homemade food!

Recipe Tips:

- if desired, you can add fresh peas, chopped cauliflower, broccoli, peeled zucchini or eggplant to a set of vegetables, they must be stewed at the same time as pumpkin and bell pepper;

- the spices indicated in the recipe are not essential, but give the finished food a pleasant aftertaste, if desired, they can be replaced with any other spices, as well as dried herbs, which are used during the preparation of vegetable dishes;
