Making jam from zucchini with lemon:

Step 1: prepare jars with lids.


Before sterilizing jars with lids, they must be thoroughly rinsed under running warm water. To do this, use a kitchen sponge and a special dishwashing detergent and rub the containers well on all sides. We wash the container until it becomes a soap. A good way to check is to swipe the glass with wet fingers. If the banks creak, then everything is fine and you can put them already on a baking sheet. If not, then extend the cleaning time by another couple of minutes, otherwise we will have an invisible film of the product, which will affect the taste of the jam.

Now turn on the oven and heat it to a temperature 120-130 degrees. Immediately after that, put the pan on the middle level, lower the metal lids and sterilize everything for 20 minutes. Then we turn off the oven, and we take out the containers with the help of kitchen gloves and special tongs and put them upside down on the kitchen table covered with a cloth towel. Let it cool for now, but in the meantime we will prepare all the components.

Step 2: prepare the zucchini.


Zucchini thoroughly washed under running warm water, shake off excess liquid and put on a cutting board. Using a knife, peel the vegetables from the peel and cut off the edges. Next, chop the components in half and remove the seeds from each part using a tablespoon or teaspoon. Attention: based on the ingredients specified in the recipe, we should get exactly 2 kilograms peeled zucchini. Now we cut the vegetables into strips approximately 1-1.5 centimeters and then chop across in small pieces. Pour the crushed components into a deep bowl and leave aside for a while.

Step 3: prepare the lemons.


Wash lemons well under running warm water and spread in a medium bowl. We pour citruses with boiling water (so that the peel does not bitter in the jam) and then move it to the cutting board. Using a knife, cut off the edges, and then divide the components into two parts. We clear each half of membranes and stones. At the end, finely chop the lemons into slices and transfer them back to the bowl, which is already without water.

Step 4: make jam from zucchini with lemon.


In a large pot, spread the chopped zucchini, lemons, and pour the sugar. Important: we do not add water, since the components will already give enough liquid in which they will be prepared. Using a wooden spatula, mix everything thoroughly, but gently until smooth, and then let stand for 2 hours. That's just during this time, zucchini with lemons and will give enough juice.

Then put the pan on medium heat and wait for the mass to boil. Immediately after that, literally cook the jam 2 minutes and then turn off the burner. When it has completely cooled to room temperature, repeat the procedure again. Important: do not forget to stir the contents of the container from time to time so that it does not burn at the base. Repeat the cooking procedure. only 4-5 times and, of course, let the jam cool.

In the end, using a scoop, pour the hot dish through the funnel into sterilized jars, cover tightly with lids and twist with a can opener.
Before hiding the jam in the pantry, put the containers upside down in some secluded place and wrap them in a warm blanket. Let them reach room temperature on their own. Already at the end we check whether we closed the cans well, and if everything is fine, then we put them in a place where there is no direct sunlight. This may not be a pantry, but also a cellar, and even a refrigerator.

Step 5: serve zucchini jam with lemon.


When the time comes (with us it comes literally in a day), we take out the jars from the pantry and open using a can opener. We spread the jam in a deep bowl with a tablespoon and serve with tea or coffee. My kids love to enjoy such yummy, spreading it on bread and butter. You can also add jam to any baking, but this is a matter of taste.

- cans can also be sterilized in another way. For example, in the microwave. To do this, pour ordinary cold water into clean containers so that it fills them approximately 2 centimeters, and put in an electrical appliance for 2-3 minutes at a power of 700-800 W;

- Do not forget to constantly stir the jam during the cooking process, otherwise it may release harmful substances after burning;

- so that midges or food do not get into the pan while the jam is cooling, be sure to cover the container with a clean piece of paper, securing it along the edge with clothespins;

- if you do not have a special pan, do not be discouraged, because it can be replaced with an aluminum bowl.
