Pie with cottage cheese and berries

Making a pie with cottage cheese and berries:

Step 1: Cook the dough.

Pour wheat flour into a deep bowl, sifting it through a sieve, and then add the baking powder for the dough and mix the dry ingredients with each other well. Put the butter in a bowl with flour and baking powder and with a fork, grind, stir until the mass turns into wet crumbs. Pour sugar and an egg there, and hand-pull out the dough until smooth. Roll the finished mass into a ball, wrap in cling film and place to rest in the refrigerator 30 minutes.

Step 2: Prepare the curd filling.

While the dough is resting, you can prepare the filling, start with the curd filling. To begin, wipe the cottage cheese through a sieve so that it becomes softer, and the filling is airy and tender. In a bowl of cottage cheese, add sour cream, eggs and sugar. Beat with a mixer until smooth. As a result, you should get a snow-white mass of creamy consistency.

Step 3: Prepare the berries.

Pour the berries into a colander and sort through. First, remove the spoiled ones and begin to deteriorate, and secondly, remove the twigs and small leaves so that they also do not get into the cake. After this selection, wash the remaining berries and shake them, getting rid of excess water.

Step 4: Bake a pie with berries and cottage cheese.

Set the oven to warm up 180 degrees Celsius, and until it reaches the temperature you need, form a cake. To begin with, well coat the demountable mold with butter, and then place the shortcrust pastry in it. Form the sides on the sides. Around the perimeter of the resulting cake, make light punctures with a fork. Pour the curd filling onto the laid dough, smooth it with a spatula and pour the berry mixture on top, distributing it evenly throughout the pie. Put everything to bake in the oven on 35 minutes. During this time, the filling is seized, the cake is covered with a crust, and the berries will give juice.
Remove the finished cake from the oven immediately, but do not rush to remove it from the mold, wait until it cools down, and for this just leave it for a while at room temperature. Remove the mold from the cooled product and start serving.

Step 5: Serve the pie with berries and cottage cheese.

Ready cake with berries and cottage cheese is served in the same way as most other similar desserts. Just cut it with a knife into the number of parts you need and shift the resulting slices with special dessert saucers. Make a hot drink for everyone, such as cocoa or coffee, and start the dessert. In summer, this cake can be served with cold green or black tea.

- Instead of cottage cheese, you can use curd and cream cheeses, such as, for example, ricotta and Philadelphia.

- Berries such as strawberries and raspberries do not withstand temperature well, so you should not cook a pie exclusively with them.

- In winter, when there is no access to fresh berries, you can take fresh-frozen to make this pie.
