Cooking cakes with cottage cheese in a pan:

Step 1: prepare the flour.

Pour the flour into a sieve and sift it over a medium bowl. This must be done so that the dough is tender and airy due to the fact that the component is saturated with oxygen and gets rid of excess lumps.

Step 2: prepare the dough for the tortillas.

In the middle of the sifted flour with a clean hand we make a small depression. Now pour salt here and pour vegetable oil and hot water. Knead the dough, adding a little more flour if necessary. When the mass becomes more dense, we shift it to the kitchen table. Attention: be sure to sprinkle it with a small amount of flour so that the dough does not stick to it. Knead the mass until it becomes elastic and dense. We should get dough like dumplings. Next we give it the shape of a ball and leave for 10 minutes aside. Let it rest, and in the meantime we will prepare the filling.

Step 3: prepare the dill.

We wash the dill well under running water, shake off excess liquid and put it on a cutting board. Using a knife, finely chop the greens and immediately pour it into a clean plate.

Step 4: prepare the cottage cheese.

Put the cottage cheese in a small bowl and knead it with a fork. This must be done so that the filling is obtained without pronounced lumps.

Step 5: prepare the filling for the tortillas.

Put paprika, finely chopped greens in a bowl with cottage cheese, and salt to taste. Using a tablespoon, mix everything thoroughly until a homogeneous mass is formed. Everything, the curd filling is ready!

Step 6: prepare cakes with cottage cheese in a pan.

When the dough rests a bit, use the knife to divide it into small pieces, depending on how large you want the tortillas. Now, with clean hands, we roll each into a ball and dunk from two sides a slide of flour right on the kitchen table.

Using a rolling pin, we roll out the dough into a thin layer thick no more than 2-3 millimeters.

In the middle of each cake we lay out a couple of tablespoons of curd filling and begin to form a dish. With clean hands, we collect the edges of the dough in the middle so that from the side they look like khinkali, and we carefully pinch them.

Now carefully roll out each “bag” on both sides to the state of the cake. Important: try to make it so that the filling does not start to fall out, especially in those places where the dough is very thin.

When all the cakes are ready, put the pan on medium heat. We warm the container well and, in turn, lay out the dough with the filling. Attention: it is not necessary to lubricate the pan with vegetable oil, since this component is included in the composition of the cake (therefore, the dish should not stick and burn at the base of the container). Fry everything on both sides until a golden crust appears on the surface.

Using a wooden spatula, we spread each cake on a large flat plate and do not forget to grease with a piece of butter pounded on a fork. At the end, turn off the burner and start serving the dining table until our dish has cooled down.

Step 7: serve the cakes with cottage cheese in a pan.

We serve still warm cakes to the dining table with a hot tea or coffee (as you like). By the way, the dish is quite substantial, so it can easily serve as breakfast or dinner. Enjoy it!
Bon appetit to all!

Recipe Tips:

- in addition to paprika, you can add to the filling 1 teaspoon soy sauce, as well as finely chopped green onions and parsley;

- to make the dough tender, you need to use only wheat flour of the highest grade, fine grinding and a proven brand. Also, for better preparation, you can sift the component at least two times;

- if you come across a rather grainy cottage cheese, then it is better to grind it with a blender so that large pieces of cheese are not caught in the dish.
