Cooking chicken in tomato-honey sauce:
Step 1: Prepare the onion and garlic.
Let's start with the onion. Peel both onions. Cut one into four parts and finely chop into slices. Transfer to a small plate. Cut the second onion coarsely and transfer to a bowl.
From the second onion you need to make mashed potatoes. You can use a blender for this or rub the onion on a fine grater. Why are we doing this? To make the sauce tastier.
Peel the garlic cloves and grate. Cut garlic so finely will not work, but you can use the garlic.
Step 2: Prepare the spices.
Combine ground black pepper, curry, ground ginger root, hot red pepper and tandoori masala in a bowl.
Tandoori masala is an Indian spice mix that includes cumin, coriander, cinnamon, bay leaf, chili pepper, black cardamom, nutmeg, nutmeg, fenugreek, cloves, onions, garlic, mustard, black pepper, ginger.
It is difficult to reproduce at home, it is better to buy ready-made in a spice store. If this is not possible, then add to the other spices 1/4 teaspoon of ground spices from tandoori masala, which are available to you.
Step 3: Cook the chicken in tomato-honey sauce.
Cut the chicken into small pieces. Put the pan on medium heat, pour a little vegetable oil. Do not overdo it, the fillet should not swim in it. Enough 2 tablespoons. Put the chopped meat, salt a little and warm until it changes its color from pink to white. There is no need to fry it until a crust appears, all the same, then we will stew in the sauce. Transfer the meat to a deep plate.
In the same pan, add a couple of tablespoons of vegetable oil, put the onion, fry it until it becomes soft and translucent, on low heat for about 5 minutes.
Add the prepared spice mixture to the onion, mix and warm for about 2 minutes. When heated in hot oil, the spices will begin to give away the best that they have - their aroma.
Add canned tomatoes to the onion and spices. They can be replaced with tomato paste (4 tablespoons) or fresh tomatoes that need to be scalded and peeled.
Add hot water, honey, salt to taste. Mix well. If you use tomato paste, then the amount of water you need to increase by one glass. As a result, we get tomato-honey sauce. Cook it for about 15 minutes over low heat.
Put chicken fillet in the sauce, mix, cover and simmer for 30 minutes over low heat. Stir the meat in the sauce from time to time, do not increase the fire so that the sauce does not burn. Turn off the heat, leave the meat for 15 minutes to insist a little and cool. Everything, meat in tomato-honey sauce is ready.
Step 4: Serve the chicken in tomato-honey sauce.
Arrange the chicken in a tomato and honey sauce in a bowl and garnish with finely chopped herbs. Serve meat with thin tortillas or pita bread.
