Step 1: prepare the meat.


This dish does not pretend to be posh, but it can be a great addition to lunch or a hearty dinner, moreover, its preparation does not take much time. So, first of all, we take fresh tenderloin, carefully rinse it under trickles of cold running water, dry it with paper kitchen towels, put it on a cutting board and use a sharp kitchen knife to remove the film from the meat, excess fat, thin veins, as well as bones, which are very often remain on a log house.
Then we cut the pork across the layers with a thickness of about 2 centimeters and each beat in turn with a kitchen hammer, so that they become thinner, from 9 millimeters to 1 centimeter.
After that, we rub slices on both sides to taste with salt, a mixture of spices for meat, transfer to a small bowl and leave there, on 15-20 minutes or before use to soak in the aroma of spices.
Also at this time we preheat the oven up to 180 degrees Celsius and using a baking brush, grease a non-stick baking sheet or a heat-resistant baking dish with a thin layer of vegetable oil.

Step 2: prepare vegetables and other ingredients.


Meanwhile, with a clean knife, peel the potatoes and onions. We wash them together with tomatoes under a stream of cold running water, dry them with paper towels, one by one we spread these products on a new board and continue preparation. We remove each tomato from the place where the peduncle was attached, and shred it in layers of 1.5-2 centimeters thick, slices with the same size or even simply divide it into 4, 5 or 8 equal parts.

We cut the beam in half rings 6-7 millimeters thick or in large cubes of 1 centimeter.

Grind the potatoes with long straws, slices or rings with a thickness of about 7 to 9 millimeters, distribute the slices into separate bowls, put other necessary ingredients on the countertop and proceed to the next step.

Step 3: put the products in the mold.


At the bottom of the prepared baking sheet or form, distribute evenly sliced ​​pieces of beaten pork. Sprinkle the meat with half the chopped onion and lay the potatoes in figure or art mess on top of it. Season to taste with salt, black pepper and optionally an additional portion of spices for meat.

Then sprinkle with the rest of the onion, decorate with chopped tomatoes and tighten the shape with aluminum food foil, trying to make it so that there are no cracks.

Step 4: bake meat with potatoes and tomatoes in the oven.

Then we send the still raw food to the preheated oven in the middle rack and bake the meat with potatoes and tomatoes 40 minutes. During this time, all the components of the dish will reach full readiness, but to make it look more attractive, we stand it in the oven without foil 10-15 minutes or until the surface of the potato is slightly browned.

Then we pull the kitchen gloves in our hands and rearrange the already very fragrant culinary masterpiece on a cutting board, previously laid on the countertop. Using a kitchen spatula, we spread the vegetables and meat in portions on plates and serve to the table.
