Stuffed zucchini with sausage and mushrooms


Ingredients for cooking stuffed zucchini with sausage and mushrooms.

Cooking stuffed zucchini with sausage and mushrooms:

Step 1: Prepare the zucchini.


Rinse the zucchini, cut off the ends. Divide each vegetable in half and use a spoon to remove the core. Be careful not to damage the peel and make a hole in the resulting boat.
Some recipes recommend discarding the cut core, but you can leave it by removing the seeds and use it to make the filling.

Step 2: Prepare the mushrooms.


Clean the mushrooms from dirt, if necessary, remove dark places. Cut mushrooms for this dish should be in small cubes.

Step 3: Prepare the carrots.


Rinse and peel the carrots with a special knife for peeling vegetables. Grate pure carrots on a coarse grater.

Step 4: Prepare the onion.


Having peeled the onion from the husk, crumble it in any way convenient for you. You can also rub with a grater.

Step 5: Prepare the sausages.


The sausages should be removed shell, and then cut them into circles or cubes, depending on whether you like larger pieces, or smaller.

Step 6: Prepare the cheese.


Using a grater, grate the cheese and set aside. We need it only at the very end.

Step 7: Fry the filling.


Put the pan on the fire and grease with vegetable oil. Pour mushrooms into a frying pan and fry 5 minutes. Do not forget to stir. After, add onions, carrots, zucchini pulp and sausages to the mushrooms. Salt, pepper and fry more 10 minutes.

Step 8: Cook the zucchini.


While the filling is fried, boil water in a clean saucepan, dip the zucchini into it and cook 1 minute. Vegetables should soften slightly.

Step 9: Bake stuffed zucchini.


When the filling and zucchini are prepared, lay the resulting boats on a heat-resistant baking sheet greased with vegetable oil. Using a spoon, start the zucchini with fried vegetables and sausages, put the tomato sauce on top and send to the preheated 180 degrees the oven. Bake stuffed zucchini for 30 minutes. After the time necessary for cooking has expired, open the oven and sprinkle the boats with cheese filling, bake more 5-7 minutes before the cheese is covered with a characteristic crust. After that, stuffed zucchini with sausage and mushrooms can be served!

Step 10: Serve the stuffed zucchini.


Serve stuffed zucchini with sausage and mushrooms hot. Mayonnaise or tomato sauce goes well with them. This dish does not need an additional side dish.
