Making a classic squid salad:
Step 1: prepare the squid carcass.
First, put the squid carcass in a small bowl and leave aside to reach room temperature. Immediately after that, we wash seafood on all sides under running warm water and put it on a cutting board. Using a knife, if necessary, we clean the component from the remaining skin and at the same time put on a large fire a medium pan filled half with ordinary liquid from the tap. Attention: so that the water boils faster, cover the container with a lid.
Immediately after that, carefully spread the squid carcass here and boil it for 2 minutes. Important: in no case overexpose the component, otherwise it will become rubbery and tasteless. After the allotted time, we turn off the burner, and seafood we get with the help of a slotted spoon and put it on a cutting board to cool to a warm state.
In the end, using a kitchen knife, grind the squid into thin strips or rings and transfer to a clean plate.
Step 2: prepare the eggs.
We lay the eggs in a small pan and fill with ordinary cold water so that it completely covers the components. Now put the container on medium heat and wait for the liquid to boil. Immediately after that, boil hard-boiled eggs for 10 minutes.
After the allotted time has passed, turn off the burner, and carefully use the kitchen tacks to rearrange the pan into the sink under a stream of cold running water. Leave the components for a while in such a position that they are completely cool. Now we clear their shells with clean hands and put them on a cutting board.
To grind eggs, you can choose one of two options. The first is to finely chop the components with a knife.
Second: using a coarse grater, grind the eggs to a chip state. Both the first and second methods of preparing such components are good in their own way. I prefer the latter more, because then the eggs are almost not felt in the salad, which allows you to fully experience the taste and aroma of squid. Pour the crushed components into a clean plate and for now leave aside.
Step 3: prepare the onions.
Using a knife, peel the onion from the husk and rinse well under running warm water. Now put the component on a cutting board and cut into two parts. We chop each half across thin thin rings and immediately pour it into a deep bowl.
Attention: so that the onion in the salad does not bitter, it is best to marinate it in advance. To do this, pour a couple of tablespoons of table vinegar and half a glass of warm clean water into the container. Mix everything gently and leave to marinate for 10 minutes.
Then transfer the chopped onion into a colander and rinse under running cold water to wash off the remaining vinegar. We leave the container with the component aside so that there is excess liquid from the glass.
Step 4: prepare the parsley.
In order to decorate the salad, I often add to it or sprinkle with chopped herbs before serving. It is absolutely not necessary to do this, since everything relates to the matter of taste. In the event that you still love parsley, first we rinse it under running cold water, shake off excess liquid and put it on a cutting board. Using a knife, finely chop the component and immediately pour it into a free saucer.
Step 5: prepare a classic squid salad.
In a medium bowl, spread the chopped squid carcass, eggs, and pickled onions. Season with mayonnaise and sprinkle with salt to taste. Now, using a tablespoon, mix the ingredients well until a homogeneous mass is formed. That's it, the salad is ready, so you can serve it to the dining table. Attention: for the amount of components indicated in the recipe, you will need no more than 150-200 grams of sauce.
Step 6: serve a classic squid salad.
When the dish is ready, transfer it from a bowl to a salad bowl or a special flat plate. We decorate the dish with finely chopped parsley and serve at the dinner or holiday table along with slices of bread or toasts.
- try to use fresh homemade mayonnaise to make a salad, then your dish will become even more delicious;
- When choosing frozen squid carcasses, first of all pay attention to their integrity. Also, if seafood stick together, it means that they are repeatedly thawed. Such an action can not only spoil the taste of squids, but also mean that they are far from fresh;
- to relieve the onion of bitterness, it can also be just scalded with boiling water, having previously laid the component in a colander.
