Step 1: prepare onions.
Using a knife, peel the onion from the husk and rinse thoroughly under running water. Then we lay out the component on a cutting board and cut into half rings or chop into cubes. I usually practice the second version of cutting. Pour the prepared onion into a clean plate and leave it aside for a while.
Step 2: prepare the potatoes.
Using a knife, peel the potatoes and rinse thoroughly under running water to wash away any remaining dirt. Now we wipe the tubers with kitchen paper towels and put them on a cutting board. Cut the potatoes into strips, about a thickness 1-1.5 centimeters. The chopped vegetable is transferred to the medium bowl and immediately proceed to the next process until our potatoes have darkened, interacting with air.
Step 3: prepare the egg.
Using a knife, break the eggshell, and pour its contents into one of the bowls. Using a hand whisk, beat the component well until a homogeneous liquid mass is formed.
Step 4: prepare potato dressings.
In two bowls (in one, of which a beaten egg), pour the mayonnaise so that it is evenly distributed in the containers. In the second dish, where only the sauce, add tomato paste and begin to prepare dressings. First, beat the mayonnaise with tomatoes until a homogeneous mass is formed.
After that, mix the beaten egg with sauce with the same improvised inventory. The mixture should, as in the first case, be homogeneous. All refueling ready!
Step 5: prepare potatoes with mayonnaise in a pan.
First of all, pour a small amount of vegetable oil into the pan and put on medium heat. When the contents of the container are well warmed up, add the chopped onion here. From time to time, stirring with a wooden spatula, fry the component until a soft golden color.
Immediately after that, if necessary, add oil and spread all the potatoes with straws. Fry the dish until half cooked. Attention: Do not forget to stir everything with improvised inventory so that the potatoes do not burn.
Now, without turning off the burner, visually divide the fried pieces in half and shift these parts into two small bowls. Immediately fill the portions with two dressings and, using a tablespoon, gently but thoroughly mix everything. Important: sauces should be completely absorbed in potatoes.
We put the mass back into the pan, smeared with dressing from mayonnaise and tomato paste. Immediately after this, place the remaining potatoes from another bowl in a second layer. Reduce the heat, close the container with a lid and simmer the dish for 10 minutes. During this time, the potato should reach the desired state, absorb the whole sauce, and the egg should be well-fried. After that, you can turn off the burner and start serving the dining table. Important: if you want the dish to fry again at the end, then remove the lid and extend the cooking time for 5-7 minutes (at the same time, not forgetting to stir everything from time to time with a wooden spatula).
Step 6: serve potatoes with mayonnaise in a pan.
