Cooking zucchini with mayonnaise for the winter:

Step 1: sterilize the jars with lids.

So that our preservation does not explode, be sure to sterilize jars with lids. But before you do this, rinse everything under running warm water. For this, we will use a kitchen sponge with detergent for dishes. We rinse the cans until they begin to creak, if you hold wet fingers on the glass. Immediately after this, place the container with its neck down on a clean cloth towel, and place the covers next to it.

Now in a medium saucepan lay out a round lattice or a form for dumplings. Important: the diameter of the inventory should not be larger than the bottom of the container. Due to this design, our cans will not break and will be located just above the maximum heating temperature of the liquid. Then we carefully place the containers on top of the grill or the shape, put the lids next to it and fill it with ordinary running water so that it completely covers everything. We put the pan on a big fire and wait for the liquid to begin to boil. Immediately after this we reduce the fire and sterilize the jars with lids for 7-10 minutes. After the allotted time, turn off the burner, and carefully remove the contents of the container with the help of kitchen tacks. We put the cans back on the cloth towel with the neck down and leave it for a while aside.

Step 2: prepare the zucchini.

Thoroughly rinse the squash under running water and put it on a cutting board. Using a knife, cut the peel from vegetables, then cut lengthwise into two parts and from each half, if necessary, remove the edges. Now, using a teaspoon, we scrape out the seeds and discard them (they will not be useful to us).

The zucchini themselves are cut into small pieces and put into a large bowl.

Step 3: prepare the onions.

Using a knife, peel the onion from the husk and rinse thoroughly under running water. We lay out the component on a cutting board and cut into four parts. Pieces of the onions are moved to a small bowl and temporarily set aside.

Step 4: prepare zucchini with mayonnaise for the winter.

In a meat grinder, we spread the slices of zucchini and onions in turn and grind everything through a fine lattice into a large aluminum bowl. Then add vegetable oil, tomato paste and mayonnaise here.

Using a tablespoon, mix everything thoroughly until a homogeneous mass is formed. Now put the bowl on medium heat and after boiling the mixture, cook the caviar within 1 hour.
After the allotted time, add black ground pepper, salt and sugar to the container. Mix everything thoroughly with improvised inventory until smooth and continue to cook squash one more hour. Attention: after we mix the eggs, spread the bay leaves on top, so that at the end of the preparation the component can be removed using a tablespoon from the main mixture.

Using a scoop, pour the hot dish into sterilized jars, cover with lids and twist with a can opener. We put the containers upside down in a secluded place, wrap them in a warm woolen blanket and wait for the caviar to become room temperature. It usually takes a night and another half day. At the end we hide the jars in a cool place, for example, a closet, and store until the cold.

Step 5: serve zucchini with mayonnaise for the winter.

When the time comes, we get jars of zucchini from a secluded place and, using a can opener, we free them from the lids. Using a tablespoon, we spread the dish in a deep bowl and can be served at the dinner table with fried or boiled potatoes, as well as just with slices of bread.
