Sponge Cake with Butter Cream and Bananas


Ingredients for making biscuit cake with butter cream and bananas.

Biscuit:

  1. Flour 75 g.
  2. Potato starch 75 g.
  3. Lemon zest 1 tsp
  4. Sugar 175 g.
  5. Egg 4 pcs.
  6. Baking powder 4 g.
  7. Vanilla Sugar 8 g.
  8. Vanilla Sugar 8 g.

Cream:

  1. Cream 30% 700 ml.
  2. Gelatin 4 g.
  3. Water 4 tbsp. l
  4. Banana 1 pc.
  5. Sugar 2 tbsp. l
  6. Milk black chocolate with crushed nuts 50 g.

The layer in the cake:

Cooking sponge cake with butter cream and bananas:

Cover the bottom of the mold with removable sides with parchment, grease the sides with butter.

Separate the yolks from the proteins, beat the yolks with sugar, vanilla sugar, lemon zest in a steep foam.

Mix flour with baking powder and starch.

Beat egg white until lush, strong peaks, in a clean, dry bowl and a clean, dry whisk.

Mix the yolks with proteins, pour out the flour mixture, mix well with a silicone spatula. Slowly neatly.

Pour the dough into a mold, smooth the surface. Bake in a preheated oven to 180 degrees, 40 minutes. Check the readiness with a wooden skewer, it should be completely dry, free of crumbs of adhering dough.

Remove the finished biscuit from the mold and put on the wire rack until it cools completely.

Pour gelatin with water, leave to swell.

Detail chocolate knife.

Grind the banana in a mashed blender, add sugar and mix.

Heat gelatin over low heat, stir until completely dissolved, do not boil. Allow to cool to a warm state.

Beat cream to lush peaks, add banana and chocolate puree to them. Beat at medium speed. We also introduce warm gelatin.

Cut the cakes slightly along the edge, (so that the ring from the removable form is 1 cm from the edge of the biscuit.)

Cut the biscuit in half horizontally (so that we get two round biscuits).

Melt the chocolate in a water bath.

Peel a banana, cut four pieces so that you can connect the ring from them.

Put one cake on the dish, put the ring on the form, so that the gap is the same in a circle of biscuit. Lubricate the cake with cream, dip the bananas in chocolate and put on a biscuit, so that it turns out a ring.

Carefully fill the middle of the banana ring with cream, also fill the void between the form and the biscuit, level the surface.

Put the second cake, grease with a layer of cream and also fill the void, between the biscuit and the mold, align the cream on the surface.

We put in the refrigerator for the night, or for 8 hours.

We draw stars with melted chocolate (draw stars, hearts, flowers on paper, put in a file and draw on a file). Put in the freezer.

Carefully draw a thin knife along the edge of the mold and remove the mold.

We decorate the cake with a pastry bag, sprinkle with grated chocolate, lay out or put stars. We decorate the cake at our discretion.
