Cooking pancake pie with apples:
Step 1: prepare the oil.
Today we will prepare a miracle pie of apples and pancakes. To begin with, put about 30-40 grams of butter in a small saucepan and put it on medium heat. When the fat melts, we rearrange it in a cool place, for example, near an open window, and allow it to cool to room temperature.
Step 2: prepare the dough.
Meanwhile, we put in the deep bowl the right amount of eggshell without shells. Then add salt, granulated sugar and milk to them. We mix these ingredients with a whisk or a mixer at medium speed until a homogeneous, slightly airy consistency and complete dissolution of the grains.
Then we gradually sift wheat flour there through a sieve with a fine mesh, while kneading a semi-liquid dough without lumps, resembling sour cream or cream of medium density.
Next, add melted cooled butter and a little vodka to it. Beat everything again, tighten with plastic wrap and put in a warm place on 1 hour. During this time, the flour will swell and the dough will become more dense.
Step 3: fry the pancakes.
After the required time, put on a medium heat a dry frying pan and heat it. After 2-3 minutes, grease the bottom of the hot dishes with a thin layer of butter (you will need no more than 2-3 grams). Then we pour in about half of the soup ladle of the infused, re-mixed dough.
We tilt the pan at an angle of 30 degrees so that the semi-finished flour spreads in a thin even layer, and again sent to the stove. Fry the pancake for 40-50 seconds or until its edge turns brown.
Then we pry it with a kitchen spatula, turn it on the other side and cook it as much or until blush. After that, we transfer the finished product to a large flat dish or cutting board and in the same way we fry the remaining pancakes until the dough ends.
Step 4: prepare the apples.
Then we wash the apples under cold running water and dry them with paper kitchen towels. Using a sharp kitchen knife, we cut each into 2 halves, remove the skin and the core with the stalks from them. Then we cut the fruit pulp into plates, quarters, slices 3-4 mm thick or chop on a coarse grater and proceed to the next step.
Step 5: stew the apples.
We put on a medium fire a deep, preferably non-stick pan and put apples in it. Pour purified water there and after boiling, simmer the fruit for 10 minutes under a covered lid.
Then add the remaining sugar, cinnamon and sour cream to them. We mix the products with a wooden kitchen spatula to a homogeneous consistency. Cooking them over high heat without covering, yet 3-4 minutes, until almost complete evaporation of moisture, as well as soft apples. As soon as they become tender, remove the fragrant filling from the stove and temporarily set aside so that it cools slightly.
Step 6: bring the dessert to full readiness.
Now we select the shape for the cake, it can be round, oval or, as in our case, rectangular. We cover it with plastic wrap so that the ends hang down at the edges. Then put 2-3 pancakes there, they should completely cover the bottom and sides of the selected dishes. We distribute on them a layer of apple filling with a thickness of about 1 centimeter.
After that, we cover it with another 2-3 pancakes, taking into account the fact that their edges are also beyond the sides of the form. We act until all the ingredients are over.
The last layer should be a couple of pancakes and hanging ends of flour products. Then we tighten the almost finished dessert with a film, put under oppression and sent to the refrigerator for the night.
Step 7: serve a pancake pie with apples.
Pancake pie with apples is served chilled. After insisting, it is carefully removed from the mold, transferred to a large flat dish, the film is removed from the fragrant dish, decorated with cream, syrup, whipped cream, sour cream, caramel, honey or melted chocolate and with a clean knife, cut into portions 3-4 cm thick. .
