Mash Soup


Ingredients for Making Mash Soup

  1. Meat (fresh pork) 300-450 grams

Inventory:

A kitchen knife - 2 pieces, a cutting board - 2 pieces, a bowl - 5-6 pieces, a glass (capacity 250 milliliters), paper kitchen towels, colander, stove, deep cauldron with a lid (capacity 5 liters), a kitchen spatula, a soup ladle, deep plate.

Cooking Mash Soup:

Step 1: prepare the meat.


First of all, we take fresh pork pulp, preferably a tenderloin or neck. We wash the piece under cold running water, dry it with paper kitchen towels, put it on a cutting board and use a sharp kitchen knife to remove the film, thin veins, and small bones that often remain on the meat after chopping the carcass. Then cut the pork into small cubes the size of 2-2.5 centimeters and proceed to the next step.

Step 2: stew the meat.


We put on a medium fire a deep non-stick pan with a thick bottom, and preferably a cast-iron cauldron and pour a little vegetable oil into it. 2-3 minutes laterwhen the fat is very hot, send pieces of meat there. Fry them for 15-20 minutes to a golden dense crust and almost completely ready, occasionally stirring with a kitchen spatula. First, pork will let the juice, but about across 10 minutes starts to brown, so do not waste a minute!

Step 3: prepare the rest of the ingredients.


Using a new kitchen knife, peel potatoes, onions, carrots, garlic, and Bulgarian pepper we remove from the stem and gutted from the seeds. Then we wash them together with tomatoes under trickles of cold running water, dry them with paper kitchen towels, put them on a cutting board in turn and continue the preparation. Cut the potatoes into slices of 1.5 centimeters in size, send them to a bowl of water and leave them there until use so that they do not darken.

Onions and tomatoes are chopped into cubes the size of 1 centimeter. We grind carrots and bell peppers in the same way as previous vegetables or with thin straws, rings, small sticks, the main thing is that the size does not exceed 2-3 centimeters and the thickness 5-7 millimeters. Garlic is just finely chopped and lay out the slices in separate bowls.

Then we sort out the mung bean, remove the fallen beans, pour the whole into a colander, rinse thoroughly, leave the excess liquid in the sink, and put on the kitchen table the remaining products that will be needed to make the soup.

Step 4: Cook the Mash Soup.


15-20 minutes later after the pork is browned, we send chopped onions with carrots to it. Mix everything until smooth and fry for 5 minutes until golden brown. Then we put there bell pepper, tomatoes, garlic and simmer them until the juice is completely evaporated, about another 5 minutes.
After this, pour the mash into the cauldron, pour it with purified water, season it with salt, as well as black pepper and bring to a boil over high heat. As soon as the liquid starts bubbling, we reduce it by a level between the smallest and the average. Cook green beans within 20 minutes and only after that add potatoes to the aromatic dish.

We cover the cauldron with a lid and maintain the resulting mixture on the stove yet 25 minutes until all ingredients are fully cooked. Then we move the soup to a cutting board, previously laid on the kitchen table, and insist in a covered form 7-10 minutes. Then, with the help of a ladle, pour half-thick dishes in portions on plates and serve to the dining table.

Step 5: serve the mash soup.


Mash soup is served hot as the first main course for dinner. It is served in portions in deep plates, optionally sprinkled with pickled onions, fresh finely chopped greens of dill, parsley, cilantro, basil or green onions. Also very often this dish is seasoned with sour cream, cream or sour-milk yogurt without additives. Healthy food is the key to health! Enjoy it!

Recipe Tips:

- very often 1/2 cup of washed and dried rice is put together with potatoes in a pan, this makes the soup more thick and nutritious;

- in addition to salt and black pepper, you can use any spices that season the first hot dishes, for example, coriander, sage, dried basil, paprika, oregano, savory, all kinds of peppers and many other spices, as well as herbs;

- the amount of water is best adjusted to taste. Some like thinner ones, while others like thicker soups;

- A great substitute for purified water - vegetable broth.
